The A-level Chemistry students enjoyed a day out at the Food Technology centre in Cafre, Cookstown. With a focus on A-Level Chemistry, we went on a molecular gastronomy masterclass. Here, pupils worked in the laboratory with Food Technologists, applying the principles of precipitation and ionic bonding of complex polysaccharides to create a drinkable sphere; otherwise known as… Bubble Tea! With sodium alginate and calcium lactate, along with added flavours the students were able to create their own bubble tea drink.
